Taco/Nacho Meat
2 lbs ground pork
1 red onion, diced
1 yellow onion, diced
2–3 cups shredded cabbage
4 cloves garlic, minced (or ~2 heaping tsp jarred)
2 tsp cumin
2 tsp smoked paprika
2–3 tsp organic chili powder
Pinch of cayenne (to taste)
Pinch of cinnamon
Optional: 1 tsp oregano or coriander
1 can organic diced tomatoes (drain 1/2 the liquid)
½ or 1 ish tbsp honey
Cracked black pepper + Himalayan salt
Cilantro Cream Sauce
1 bunch fresh cilantro (stems + leaves)
~1 heaping tbsp minced garlic (or 2 fresh cloves)
Juice of ½ lime (start here... a whole lime tips it sharp)
~½ cup Greek yogurt (a little less works well, adjust to your liking)
1–2 tbsp olive or avocado oil
Pinch of Himalayan salt
Dash smoked paprika
1 tsp Bragg Coconut Aminos
Heat oil in a large skillet. Cook onions until golden and softened.
Add garlic, bloom for 30 seconds. Stir in canned tomatoes and let cook down ~8 minutes.
Push to the side, add ground pork. Brown well, letting it crisp on the edges.
Season with cumin, smoked paprika, chili powder, cayenne, cinnamon, and salt/pepper. Mix everything together.
Add cabbage, letting it caramelize and soften. Stir in honey for balance.
Simmer briefly to meld flavors.
Cilantro Cream Sauce: Blend cilantro, garlic, lime juice, yogurt, oil, salt, smoked paprika, and coconut aminos until smooth. Adjust lime/salt to taste.
Heat-and-serve tortillas: 15 seconds per side until they puff and blister.
Or: pile everything over Siete grain-free avocado oil tortilla chips (cassava-based, soooo yummy and crunchy ).
Top with cilantro cream sauce and hot sauce if desired.
This one was born of fridge alchemy: a tube of pork, half a bag of cabbage, onions rolling around in the drawer. The cabbage gave the pork a sweet, smoky depth, while the cilantro cream sauce cooled and brightened every bite.
I went bold with a whole lime in the sauce, adventurous, but balance is key. Next time, I’ll stick with half.
Rating: 9/10 Honestly, one of the better tacos I’ve had in awhile. The tortillas puffed like clouds, the nachos disappeared before I could blink, and I’d make it again without hesitation. Proof that sometimes the field gives you exactly what you need with exactly what you’ve got.
