3 lb bone-in pork roast
1 full bunch fresh cilantro — use the whole bunch, stems and all
Juice + zest of 2 limes
3–4 tbsp organic avocado oil
3+ heaping tbsp of Costco’s minced garlic — large format, maximum flavor
1 tbsp Bragg’s Coconut Aminos
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp Himalayan salt
Fresh cracked black pepper, to taste
Blend the Base:
In a food processor, combine cilantro (yes, the entire bunch), lime juice and zest, avocado oil, garlic, coconut aminos, cumin, paprika, salt, and black pepper. Blend until it becomes a thick, green paste.
The stems are essential, they carry that zip of freshness, a clean green heart-centered flavor that anchors the dish.
Coat the Pork:
Place the pork roast (bone-in) into your slow cooker. Cover it completely with the herb blend, pressing it into the meat with intention... like you mean it.
Optional move for the planners and high-functioning overachievers: you can absolutely marinate this baby overnight or 4+ hours before... if you're on top of your life. If not? No judgment. The crockpot forgives.
Slow Cook:
Cover and cook on LOW for 8 hours. The bone will deepen the flavor and keep the meat tender, but be mindful of small bone fragments when shredding... especially for young kids.
Shred + Re-soak:
Remove the bone, shred the meat, and return it to the cooking juices to absorb the full spectrum of flavor.
Cook with:
Organic chicken bone broth
A pat of Kerrygold butter
A dash of Himalayan salt
Simple, nourishing, and built to carry the richness of the roast.
Top with your favorite fresh add-ons, or, let’s be honest, whatever the fuck needs to be used up in the fridge.
We went with:
Diced red bell pepper
Fresh diced tomatoes
Sliced green onions
(Would’ve added more fresh cilantro, but we sacrificed it to the sauce gods... still came out cilantro-forward and solid.)
Other killer pairings:
Pickled red onions
Avocado or guac for the creamy balance
Crumbled cotija or sharp white cheddar
Shredded cabbage or arugula for a bitter, crunchy finish
A squeeze of lime to re-activate all the citrus codes
Now for the shell:
Use organic uncooked soft-shell tortillas. Toast them in a hot, dry skillet until golden brown and puffed... crisp on the outside, warm and chewy inside.
If they don’t puff, they’re probably over-processed imposters. Real tortillas rise like they’ve got something to say. These little flour pillows are next-level! Light, golden, and dramatically superior to the shrink-wrapped sadness pretending to be tortillas.
1/2 cup plain organic Greek yogurt
Juice of 1 lemon
Pinch of Himalayan salt
Optional: a bit of ground coriander or micro-grated garlic for added edge
Whisk until silky. A fresh contrast to the deep roast.
